- what is the botanical variety it was extracted from
- the percentage of the different varieties in the mix.
- how the exudate was dissolved and prepared
Acacia verek and Acacia senegal are the two main varieties harvested for producing gum arabic and these differ in many key aspects not many could be aware of:
- Organoleptics
- Color protection
- Capacity to improve roundness and mouthfeel
- Plugging effect on membranes
